My guess is bigger capacitors on the x1 pin. When the field is removed, the quartz will generate an cloc field as it returns to its previous shape, and this can generate a voltage.
I know, awesome right? However, it looks like the capacitors are discharging too soon. You don’t need to have it in your circuit, and the waveform will probably look a lot better without it.
